Certified Health Counselor Caroll Lee and special guest chef Michelle Spiegel will share their tips and tricks to prepare this simple and delicious dinner, with strategies to make the meal more kid-friendly.

You'll learn why greens and whole grains are such nutritional powerhouses, a variety of healthy cooking techniques from roasting to sautéing to steaming, and real-world tools to help you raise a healthy eater.

-Baked Parmesan Kale Chips
-Roasted Arctic Char and Sauteed Bok Choy with Romesco Sauce

Michelle Spiegel is a NYC personal chef and former teacher at the French Culinary Institute.  She has worked in many New York restaurants including Savoy, Tabla & wd~50.  With ten years in the industry under her belt, she now cooks for many private clients, including celebrities.  Michelle loves to cook seasonally with a lot of vegetables, herbs, grains and whatever looks freshest at the market. 

Caroll Lee, CHC, AADP, is a Certified Health Counselor and graduate of the Institute for Integrative Nutrition.  Through her nutrition counseling practice, she has been helping people find the healthy balance that is missing from our lives in this modern, stressed-out world.  Caroll uses practical coaching methods to discover what works best for her client's health, supporting them as they make small but significant changes towards greater health and happiness.
