Meatless Monday!

Seersucker's recipe for a Strawberry-Rhubarb Julep.

Welcome to Carroll Gardens Patch's weekly column in the spirit of the Meatless Monday initiative, which promotes going without meat one day a week to reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity.

Here we share favorite recipes submitted by neighbors and local restaurants in which fruits and vegetables are the main attraction. 

This week, we are taking a detour from the more typical entrée fare to highlight a cocktail recipe provided by in the spirit of . While we are certainly not proposing a liquid meal replacement, this Strawberry-Rhubarb Julep would make a great refreshment before any of the previous Meatless Monday recipes we've featured.

Seersucker’s Strawberry-Rhubarb Julep

Ingredients

2 oz Elijah Craig bourbon
1/4 oz rhubarb simple syrup (see recipe below)
2 sprigs of mint
1 to 2 strawberries
Crushed ice
Whole ice

Method

1. Pack crushed ice tightly in a julep cup.

2. Muddle strawberries in a mixing glass.

3. Add Elijah Craig bourbon and rhubarb syrup to the mixing glass.

4. Add whole ice (not the crushed ice in the julep glass) to the mixing glass. Stir and strain over crushed ice in julep cup.

5. Garnish with large sprig of mint.

 

Rhubarb Simple Syrup

Ingredients

2 cups rhubarb sliced thin
1 cup sugar
1 cup water

Method

1. Combine all ingredients. Bring to a low boil. Let simmer until the syrup is flavorful and all the sugar is absorbed.

2. Strain, cool, and use.
