Meatless Monday: Tofu Salsa Verde with Hearts of Romaine

Today's recipe comes from Cooking Channel stars and Brooklyn residents Debi Mazar and Gabriele Corcos, who star on Extra Virgin and are rumored to be opening up their own restaurant nearby soon.

In a recent partnership with House Foods Tofu, Corcos and Mazar recreated some of their favorite Italian recipes using tofu as a base. Below is one of their latest twists on tradition.

Tofu Salsa Verde with Hearts of Romaine

INGREDIENTS:

1/2 (14 ounce) package House Foods Organic or Premium Soft (silken) Tofu

1/3 cup Parsley leaves, roughly chopped

2 tablespoons plus 2 teaspoons capers (packed in vinegar)

1 clove garlic, peeled

Juice of 1/2 lemon

Kosher salt and freshly ground black pepper

3 hearts of romaine, chopped

 

DIRECTIONS:

Add Tofu, parsley, capers, garlic, and lemon juice to a food processor and blend until smooth. Add romaine to a large bowl and toss with salsa verde. Leftover dressing can be kept refrigerated in a covered container for 2 days. Serves 6
