Meatless Monday: Strawberry Rhubarb Fool

This simple, festive dessert recipe is no joke.

Today's recipe, courtesy of the Meatless Monday site, has a fitting name: Strawberry Rhubarb Fool. But trust us, it's seriously delicious.

A “fool” is an old-fashioned dessert of pureed fruit topped with fresh whipped cream. But, this version has been lightened by using non-fat yogurt instead of cream. The yogurt's pleasant tang complements the sweetness of the fruit nicely.

1 lb rhubarb, leaves removed
1/2 cup sugar
6-8 fresh mint leaves
Thinly pared rind and juice of 1 orange
1/2 lb fresh or frozen strawberries, sliced
4 Tbsp non-fat yogurt or frozen yogurt

Directions

1. Cut the rhubarb into 1-inch pieces and place in a heavy saucepan with the sugar, mint, orange rind and juice. Cover and cook gently for about 5 minutes, until the rhubarb is tender but not mushy.

2. Remove from heat; add strawberries. Serve warm or cold with a tablespoon of non-fat vanilla yogurt on top of each serving. Enjoy!
