Spring Pea Agnolotti with Pea Shoots

The food at Colonie actually makes you feel freshly picked.

The new dish at Colonie, spring pea agnolotti with pea shoots and parmesan, is one of those perfect concoctions that is both light and hearty, sweet and savory.

Five or so delicately folded and spring pea filled agnolotti sit in a shallow bowl, surrounded by more, hardly at all cooked, spring peas and topped with pea shoots. The presentation is artful, and the taste even more so.

Each bite is a little bit chewy and very, very fresh.

The serving is small and delicate, and when you're through eating it, you'll likely want more. But this is a small plate, and luckily, Colonie has other delicious plates. But if you want, you could put in a few orders of the agnolotti. Though I don't recommend this, I also don't think it's a bad idea.
