Today in Carroll Gardens - Meatless Monday: Vegan, Low-Carb Tacos

A fun, meat-free recipe with Mexican flavor.

Today's recipe for Vegan, Low-Carb Tacos comes from Brooklyn resident and Trés Belle Petite Medi-Spa owner Allison Tray.

Ingredients

Large lettuce leaves
Avocado
Hummus
Sliced red onion
Cilantro
Vegetarian spicy meat (I used Trader Joe's Soyrizo)

Method

1. Sauté vegetarian meat in a pan, add taco seasoning if you like.
2. Separate lettuce leaves and spread a tablespoon of hummus down the length of the leaf.
3. Top with cooked vegetarian meat.
4. Sprinkle on cilantro, red onion, and add pieces of avocado.
5. You can get creative with your toppings and use the things that you prefer!
