Meatless Monday: Banana French Toast

We all holla for challah.

Welcome to Meatless Monday, a column in the spirit of the Meatless Monday initiative, which promotes going without meat one day a week to reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity.

Here we'll share favorite recipes in which fruits and vegetables are the main attraction. This week, we're kicking things off with the most important meal of the day: breakfast!

And who wouldn't want to dive into this Banana French Toast!?

Ingredients

1/2 lb soft tofu, low fat
2 bananas
1/4 cup soymilk, vanilla
1 tsp cinnamon
2 tps vanilla extract
1/4 cup water
4 slices Challah bread [slightly stale is preferred]

Method

1. Purée tofu, 1 banana, vanilla soy milk, water, cinnamon and vanilla in a blender.

2. Spray skillet with cooking spray and heat over medium.

3. Dip bread into tofu/banana mixture until drenched. Cook each side in skillet until brown, 3 to 4 minutes. 

4. Serve topped with slices of remaining banana*. Enjoy!

*Please note, French toast in photo was topped with preserves and confectioner's sugar.
